Ingredients
- 2 tbsp. paprika
- 2 tbsp. brown sugar
- 2 tsp. salt
- 2 tsp. garlic powder
- 2 tsp. chili powder
- 1 tsp. onion powder
- 1 tsp. ground chipotle pepper
- 1 tsp. pepper
- 3/4 tsp. dried thyme
- 4 lb. boneless country-style pork ribs
- 1 18oz bottle barbecue sauce
- 3/4 c. amber beer or reduced-sodium chicken broth
Directions
- Start by preheating your broilers.
- Combine paprika, brown sugar, salt, garlic powder, chili powder, onion powder, ground chipotle pepper, pepper, and thyme in a bowl until thoroughly blended.
- Line a pan with aluminum foil and place the ribs in the pan. If you’re working with a small oven, you can easily cut the ribs into shorter sections to make them fit more comfortably.
- Rub the seasoning into the meat, being sure to coat them completely.
- Add to the broiler for 2-3 minutes, flip, and cook another 2-3 minutes.
- Using a 5 qt. slow cooker, add all of the ribs to the pot.
- In a separate bowl, whisk the BBQ sauce and beer (or broth) together.
- Pour over the ribs and place the lid on the slow cooker.
- Cook on low for 3-4 hours.
- Remove the ribs from the juice and set aside.
- Carefully skim the fat from the juices and serve with the ribs as a sauce.
