If you have been looking for an easy recipe to prepare for your family around the campfire, no further than easy simple-to-make campground potatoes. You won’t need to prepare many ingredients to make this recipe come to life. Blow your loved ones away with these delicious potatoes that can be made in either the oven or on the grill.

- 2 lbs of quartered mini Yukon Gold potatoes
- 2 tbsp of extra-virgin olive oil
- 1 tsp of garlic powder
- 1 tsp of dried oregano
- Kosher salt
- Freshly ground black pepper
- 2 cups of shredded mozzarella
- 1 cup of freshly grated Parmesan
- Chopped fresh parsley and crushed red pepper flakes for garnish
Instructions:
- Preheat the grill to medium-high, or, if you are using an oven, preheat it to 425º.
- Prepare four substantial pieces of foil. Each should be about 10″ long.
- Mix the potatoes in a large bowl with olive oil, garlic powder, and oregano.
- Season with salt and pepper to your liking.
- Split the potatoes between the foil pieces.
- Fold the foil packets crosswise to cover the potatoes completely, then roll the top and bottom edges to ensure they are sealed.
- Place foil packets on the grill and cook for 10 to 15 minutes. (Or place in the oven and bake for about 15 minutes.)
- Unwrap the foil packets and top them with mozzarella and Parmesan.
- Fold the foil back over and cook until the cheese is melty, or for about 3 to 5 minutes.
- Garnish with parsley and red pepper flakes, and serve the potatoes warm.
